Fight Like a Mother & Raise Money for Relay for Life

So we have some awesome new products up in the site that give 1/2 of the profits back to relay for life, to fight cancer. The inspiration for these products come from a dear friend’s mom who is on her second battle with cancer. So in her honor let’s fight like a mother and work on kicking this thing! It also speaks to some personal loss in my life of one very special Aunt who sadly lost her battle with cancer a few years ago. I highly recommend getting involved in your local Relay for Life if this is something that is close to your heart or you’re interested in.

Blood is Replaceable Shirts

Technical Difficulties…

So sorry folks! I know this site has had an error message up for the past couple of days. It looks like the issues are finally resolved after many hours, with many different tech support people. Day 7 of the Paleo Diet Challenge

So I have to admit, I think the crock pot is one of the most amazing things ever invented! My friend Emily passed along this great website (Paleo OMG) with a whole ton of great recipes! I tried out the enchilada chicken stew the other night and it was fabulous! It works great in a wrap if you’ve got peeps in the house that aren’t giving up the carbs. I’ll let you know how the other recipes I try turn out! 

Day 6 of the Paleo Challenge

So since we’ve moved from Georgia and CrossFit Inception I’ve been keeping up with the workouts. I really enjoy their programming and they’ve opened up a second box, Crossfit Sacrifice which has some women-specific WODs as well. I do have to admit I’m feeling yesterday’s workout:

“Sectionals WOD 11.5″ Complete as many rounds and reps as possible in 20 minutes of:

5 Power cleans (145/105lbs),

10 Toes to bar, 

15 Wall balls (20lbs/14lbs  to 10′ target)

I’ve been trying to get in at least 3 Crossfit workouts a week and then I’ve been interspersing them with some cardio workouts and as much yoga as I can! I found a great teacher in Lisa Tiffany and working with her has really helped my form in the rest of my exercise adventures. If you’re doing Crossfit I would highly recommend getting involved in a more intense stretching program to help improve your form, it’s been amazing for me!

Day 2 of the Paleo Challenge

So it’s been fairly miserable rainy cold weather here lately and I love a good soup in the wintertime. Plus, besides having some great soup, I love having some great leftovers stashed away in the freezer for those days I don’t have it together to make dinner.

I found this recipe in the latest edition of Everyday Food and made some additions for a great Paleo chowder. Here’s the recipe to your very own Cauliflower- Salmon Soup:

Serves: 6 | Prep Time: 15 minutes | Total Time: 30 minutes or so

Ingredients:

3 tbsps unsalted butter

1 medium yellow onion, diced

1 medium head cauliflower, trimmed and cut into 1.5 inch pieces

4 cups low-sodium chicken broth (more if desired)

coarse salt and ground pepper for seasoning

1/3 tsp cayenne pepper

1-2 lbs of salmon (I happened to have some fresh-caught salmon steaks on hand)

5.5 ounces of cheddar cheese was called for in the original recipe, but I did not use it

Instructions:

1 | Pre-cook salmon ( I like to bake it at 375 wrapped in aluminum foil in the oven for about 30 minutes)

2 | In a large pot melt butter over medium heat. Add onion and cook, stirring occasionally until softened, about 8 minutes. Add cauliflower and cook until it just begins to brown, about 12 minutes. Add broth and 1 cup water, (I omitted the water to keep it thicker) and bring to boil. Reduce heat and simmer for 2o minutes. Transfer mixture to a bowl.

3 | In batches, fill a blender halfway with mixture and puree until smooth (be careful blending hot liquids). Return pureed soup to a pot and add more broth or water for a thinner consistency if you’d like. Heat it back up until it’s warmed through and flake salmon into the mixture. Add cheese (if you’re using it) and stir until melted. Season with salt, pepper and cayenne.

 

Day 1 of my 30 Day Paleo Challenge:

So something I’ve always struggled with is healthy eating. I was really, really, really active as a kid and stayed that way through college so food consumption was never an issue and burgers and fries are a go to. I’m a pretty picky eater and I’m convinced most of my childhood nutrition was found in PB&J sandwiches and a burger and fry combo (ketchup only) at whatever fast food restaurant was closest. Despite my parents’ best efforts I made it to college and, left to my own devices, I didn’t change.

Reality hit when I got married and moved to Alaska where eating normal meals with my husband, in my previous nutritional rut, with diminished activity levels didn’t go so well for me. I never did any binge dieting, I just tried to eat healthier and in better proportions. I joined a CSA (Community Supported Agriculture) which helped a lot and I started getting into the gym a couple times a week. I have to admit gyms scared me, I danced through childhood and so the machines, weights, etc. freaked me out, I think one of my best investments of time and money was working with a trainer for a month so that I could figure it all out and know enough to continue on without her. Things got better as I gave myself the freedom to get in a good workout most days of the week, something I would let myself feel guilty about, but I still didn’t have the right balance of activity and nutrition.

The workouts, I can do. I love mixing it up and I loved finding CrossFit while we were in Georgia. I don’t think I’ve sweat anywhere as much in my life as I did at Inception with Mark and Chris. It was there we were introduced to the Paleo diet and while it’s something I struggle with, I’ve never felt so healthy and fit as I did while following the diet. I loved it because it was conceptually easy for me to follow and it is still pretty easy to stick to it while eating out with friends or at social functions.

I have to admit that with the rush of the holidays and all I got way of track with my eating. Cheezits, chips, cupcakes and a huge chunk of crusty white bread are things I love to eat, but I promise that they don’t love me. So I figured, why not test out one of my new products and challenge myself to healthy eating for 30 days! The cutest dinosaur sweatshirt you ever did see

So in the midst of getting t-shirt orders together and the shop up and working in the blog I was able to put my pintrest addiction to good use! I happen to have the CUTEST 3 year old godsons who just happen to be into dinosaurs and have a daddy in the army. I found these super sweet black and gray fleece cammo sweatshirts on sale at target for $5 and then used this tutorial to add spines to the back and turn them into dinosaur sweatshirts. It was so easy I was able to make both sweatshirts in under 3 hours.

I guess they were a big hit, they even napped in them the day after their birthday :)
